Pavlova with Summer Berries

Crisp meringue shell, marshmallow center, whipped cream, ripe berries.
Whip egg whites to soft peaks. Add sugar 1 tbsp at a time until stiff and glossy.
Fold in cornflour, vinegar and vanilla.
Shape into a 22 cm disc on lined tray. Bake at 120°C for 75 min.
Turn oven off, cool inside with the door slightly open.
Top with whipped cream and berries just before serving.

- Egg whites, room temperature — 4
- Caster sugar — 1 cup
- Cornflour — 1 tbsp
- White vinegar — 1 tsp
- Vanilla extract — 1 tsp
- Whipping cream — 300 ml
- Strawberries + raspberries + blueberries — 3 cups
